I designed this flavorful grilled steak recipe for my Cuisinart Griddler – an electric grill/griddle – but I’m sure that it would work just fine on any other electric grill, and could probably be adapted to a traditional grill or cooking in an oven without too much trouble.This recipe serves four, and is an easy, reasonably healthy and economical way to enjoy steak at home.

Recipe
- 1 lb of lean steak, in four portions (I like to use a cut called the top round)
- 2 large yellow onions
- 2 tablespoons paprika
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Heat your grill.If using an electric grill, turn it to the highest setting.Wash your hands – a no-brainer for cooking any recipe, but particularly important for this one.
Peel the onions and slice into rings approximately 3/4 inch thick.Place rings on grill.
On a small plate, mix together the paprika, salt and pepper.Trim any visible fat from the steak, then use the tip of a knife to score the meat on the top and bottom of each portion in a crosshatch pattern.Gently press the scored sides of each steak onto the mixed spices, trying to pick up an even portion of the spices on each steak.Rub the spices into the scored sides of the steak with your hands, then place the steaks on the grill.
Wash your hands!
Grill the steaks until they’re done to your preference, turning once: about 3-5 minutes on a side for rare steak, closer to 7-10 for well-done.Remove from heat.Grill the onions, turning occasionally, until they’re soft and beginning to turn translucent.
Serve the steak and onions promptly.
A fresh salad will complement this main course extremely well, and add some important vegetable content to the meal.
