Today’s Sunday Dinner is Beef Stroganoff. This is an easy one-dish dinner you can throw together in less than an hour. You can easily tweak it to make it lower in fat. This recipe will serve about four adults – if you don’t eat it all at once, it reheats wonderfully on another day.
- Egg noodles, one package
- 2 pounds lean ground beef
- 4 ounces fresh mushrooms (half a pack of crimini Golden Italian mushrooms are great for flavor)
- 2 cups beef broth
- 1 onion
- 1/4 cup butter
- 4 tablespoons flour
- 1 cup sour cream
- Salt and Pepper
Boil a large pot of water and cook the egg noodles, following directions on the package. While they’re cooking, you can fix your sauce. Slice your mushrooms and chop your onions. Cook them in a large skillet over medium heat with 2 tablespoons of butter until they’re soft. Remove the mushrooms and onions from the pan. Put the rest of the butter into the same pan and let it melt. Cook the ground beef in it until the meat browns. Mix in your flour, then stir in your beef broth and cook until it starts to thicken. Now add the mushrooms and onions and stir in the sour cream. Salt and pepper to taste. Keep cooking until the sauce is hot but don’t let it boil. Serve over the egg noodles.
This dish lacks a vegetable component. Since you should have several servings of veggies a day, you may want to add a dark green salad as a first course. Otherwise, you can just make sure you get your veggies during another meal on that day.
